Srilankan Christmas/Wedding Cake Recipe

18cm tray

4  eggs
200g sugar
100g butter
3 egg whites
100g semolina

Dried fruits(750g)
100g sultanas
100g cherries
 ginger preserve
100g cashew nuts
pumpkin preserve
100g raisins
50gchow chow
50g candied peel

Essences
2 table spoons vanilla essence
3-4 tblspoons honey
half of strawberry jam  (100g bottle)
1/2 spoon almond essence
5-7 tblspoons wine glass brandy
2 teaspoons spice powder (cardamom, cloves, nutmeg, cinnamon (ground together)

Method 
  1. Chop all the fruits
  2. Slightly roast the semolina and when cool,pour ½ of the essences and spices to the fruit mix and add semolina, mix well and leave in a jar for 1day.
  3. preheat the oven 10min time
  4. beat butter and sugar and set aside. 
  5. separate the egg yolks from whites 
  6. add egg yolks one by one to the butter mixuter and beat well
  7.  beat the egg whites 
  8. Add all the balance of spices and essences ,  strawberry jam,fruit mix into the mixter and add beaten egg whites little by little and fold it and mix it with a spoon
  9. Pour into a tray which has been lined with greaseproof paper and bake for about 40min to1hour in a slow oven at 180 c
